blueberry pie

I'm probably the only person in the world who has just baked her first pie from scratch! I seriously can't believe I hadn't done it before. It turned out pretty dang good for being my first pie so i'm excited to bake the next one. Our peach and apple orchard is finally open so the next one will be with yummy freshly picked fruits. I never baked them from scratch because I thought it would be too difficult and it wasn't at all. I had all the ingredients I needed so I gave it a go.
Preheat oven to 425 degrees F 
Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.
Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.

To make the dough for the pie crust, mix 2 1/2 cups all-purpose flour and 1 teaspoon each salt and sugar in a medium-size bowl. Cut 2 sticks chilled unsalted butter into pieces. With a pastry blender, cut in butter, working until mixture resembles coarse meal. 
(I used a fork to mix the butter and it worked just fine)
Add 4 tablespoons ice water; work with hands until dough comes together. If dough is still crumbly, add more ice water a tablespoon at a time (up to 4 more tablespoons). Do not overwork.
Divide dough in half, and flatten halves into disks. Wrap disks separately in plastic; refrigerate at least 1 hour.
I then baked the pie at 400 for 40-50 min
